You've already learned that adjectives normally follow the noun. Now, you can see that when the noun is definite (with the addition of the prefix "HA-", then the adjective also takes the same "HA-" prefix). In Hebrew, instead of saying "the good hotel", think of them as saying "the hotel, the good one".
